When playing Assassin’s Creed Valhalla on an ultra-wide monitor, all cutscenes, story cutscenes, and straightforward conversations, even when dealing with vendors and traders, will add black vertical borders to the sides. This is true for my case with 21: 9 as well as for 32: 9.
This is a method I found on Steam for Mafia: Definitive Edition. The same works for Asssassin’s Creed Valhalla (and Horizon Zero Dawn, for that matter).

Copy your original exe files before starting this operation. There shouldn’t be any issues, but just to be sure, it wouldn’t hurt to have the backups.
I have used this tool to troubleshoot black bars issues for Ultrawide resolutions for Mafia Definitive Edition as well as Horizon Zero Dawn for the past two months before Assassin’s Creed Valhalla launched.

Some scenes, specifically related to the main storyline, are pre-rendered and will always appear with black bars on the sides. However, they are not too common and nothing can be done to avoid or fix them.
Please note that the video demo is part of the main story in England. It doesn’t reveal anything interesting or important, but I thought I would warn you.
